Many Modernist ingredients are sensitive to pH (acid/alkaline) balance and will only work within certain pH ranges. We recommend that you have a pH meter handy for developing and troubleshooting recipes
This high accuracy pH meter with a fast microprocessor is small and portable. Its large LCD that displays pH and temperature (°C) in an extended range from -2.0 to 16.0 pH and alternately shows temperature from -5.0 to 70.0°C. The inclusion of a thermometer probe allows it to compensate pH readings automatically for temperature. It has a stability indicator and hold function that freezes the display for easy and accurate recording. It also has graphic symbols to guide you through all operations.
Calibration is made automatically in 1 or 2 points with memorized standard and NIST buffer sets. The double-junction electrode and temperature probe (each with 1 meter cable) can be replaced quickly and simply. And the modular design allows easy battery replacement.

This meter is approved for commercial applications. If you have a commercial kitchen or production facility, you should be using a meter that is approved for use by food safety authorities.
Important: Our Professional meter uses a glass electrode sensor, which while protected is susceptible to breakage. This sensor must be handled with care and stored in a buffer solution. If the sensor is broken it can be replaced. If the sensor is allowed to dry out it may affect the accuracy of the meter readings.
